Week 19 - Nutella Pancakes

Did you know that Tuesday, February 5th was World Nutella Day?  Yup!  It is!  And I love me some Nutella.  What is it?  Nutella is a delicious Hazelnut spread that is great on bread, in desserts, and quite frankly, on a spoon all by itself.  So in honor of this tasty spread's day, I made pancakes with it.  I found two different recipes online and decided to make a combination of them both.  One recipe called for mixing 2 tablespoons of Nutella spread in to the batter, and the other recipe required sandwiching a layer of Nutella between the batter, making a stuffed" pancake.

The pancakes turned out delicious and decadent.  Even my husband who isn't a fan of Nutella (I don't understand this) liked them.  Hope you do too, jó étvágyat!

Double Nutella Pancakes

Ingredients

  • 2 eggs, separated
  • 2 cups buttermilk
  • 4 tablespoons melted butter
  • 2 cups "Simply Perfect" Pancake Mix, see week 5
  • 2 tablespoons, plus 1/2 cup Nutella
  • 1 stick butter, for greasing the pan
1. Heat an electric griddle or frying pan to 350 degrees F.  Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
2. Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
3. Melt 2 tablespoons of Nutella in the microwave (approximately 30-40 seconds).  Mix in to the pancake batter until it looks like a marble swirl, rather than completely mixing it in to the batter.   

4. Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.
5. Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)
6. Melt 1/2 cup Nutella in the microwave (approximately 30-40 seconds).
7. Gently ladle the pancake batter onto the griddle.  Spread out the batter with the back of a spoon.  Pour some of the melted Nutella on to the pancakes.

8. Top pancakes with more batter to cover the Nutella.

9. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.
10. Serve immediately with whipped cream and a drizzle of Nutella.
