So what's in store for me now that I have completed my quest of 52 pancakes? Well, for now, I will be taking a break from pancakes, and any kind of breakfast food for that matter. For at least a few weeks, maybe months, I do not want to wake up on the weekends and measure, mix, and cook.
There are a few french toast recipes I've been storing away to try out after this, but I think if try to do 52 weeks of French Toast my husband will hate me. As will my waist line.

Fruit Taco Pancakes
Ingredients
- 2 eggs, separated
- 2 cups buttermilk
- 4 tablespoons melted butter
- 2 cups "Simply Perfect" Pancake Mix (See week 5)
- Zest and juice of 1 lemon
- 1 tsp vanilla extract
- butter, for greasing the pan
- Assorted fresh fruit of your choice
- Whipped cream (optional)
Directions
1. Heat
an electric griddle or frying pan to 350 degrees F.
2. Whisk
the egg whites until white and frothy. 3. In another bowl, whisk the egg yolks, buttermilk, melted butter, and pancake mix together.
4. Add in the egg whites and then mix in the lemon zest, lemon juice, and vanilla.
5. Lightly butter the griddle.
6. Gently ladle the pancake batter onto the griddle. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.
7. Top each pancake with fresh fruit, whipped cream, fold, and eat like a taco!
